The attitude towards healthy eating in society has changed dramatically for the better in recent years. Nutrition is considered by many professionals as the most important factor in the positive or negative functioning of the human body. Both intellectually and physically, a person is what he eats.
It is a proud fact that Georgia is among the 30 countries with the best cuisines in the world and takes 17th place in this list, although Georgia is not included in the ranking of 50 countries with healthy cuisines. In our country, knowledge in this area is still scarce, and that is why healthy eating criteria are rarely taken into account when preparing traditional or new dishes. However, a healthy eating culture has already taken hold in a certain part of society, and accordingly, the demand for healthy products is also increasing.
Satatsuri is one of these products and rightfully takes its place among delicacies. Although it is quite an expensive pleasure, as experts say, its properties do not lag behind the price. This low-calorie product is a real reservoir of vitamins and microelements - A, B1, B2, B9, PP, C, E, contains vitamins, calcium, potassium, magnesium, phosphorus, iron and zinc, and most importantly, asparagine, which is an excellent remedy for regulating blood pressure.
The growing awareness of this product is confirmed by the sharply increased import rate.
Jaba Gogolashvili, the chairman of the cooperative "RK Ozaani", who, together with his brother, has been cultivating this crop in the village of Ozaani, Dedoplistskaro Municipality, for several years, also speaks about the increased interest in satatsuri.
The entrepreneurial brothers have known wild yams since childhood. The family often went to collect wild yams, and due to their beneficial and at the same time tasty properties, they often used them as food.
The cooperative already grows satatsuri on 2 hectares, and seedlings are grown from certified seeds imported from the USA. 12 people are already employed in the production, and this number is increasing with the increase in production, because growing satatsuri is a very labor-intensive task and most of it is done manually, therefore it requires the involvement of many people.
The cooperative "RK Ozaani" plans to expand production and claims that if they take over the entire production, the harvest will increase to an average of 8 tons. Currently, they harvest about 2 tons.
As Mr. Jaba states, they have no sales problems. The products they produce are mainly sold in large chains, and the demand is so high that they cannot fully ensure supply at this stage, so they are refraining from exporting for now. However, the cooperative plans to increase production to 5 hectares, and then they will think about exporting the product abroad.
